Picture this…
You’ve just started eating healthy and you ARE prepared! Today you’re heading to a barbeque at the beach with friends and you’ve thought of everything. Since everybody’s bringing their own food, you’ve gone to the grocery store and purchased veggies and chicken breast. You even got a tiny bottle of olive oil so that you can have your healthy fats with you.
You’re so excited because you have all the confidence in the world that you will be able to eat healthy even though you’ll be surrounded by temptations. You arrive at the cookout, you’re about to put your chicken on the grill and you realize you have nothing to season the chicken with. Ugh! What do you do next?
This happened to me about three years ago and I found such a great solution that now this chicken is one of our most frequent go-to family dinner recipes. I’ll be sharing this Must-Have Easy and Delicious Mustard Chicken Recipe with you as a solution to that moment when you don’t have many ingredients to choose from, you want something quick, and you want to make a flavorful recipe.
HOW I STUMBLED UPON THIS EASY AND DELICIOUS MUSTARD CHICKEN RECIPE
There I was at this cookout a few years ago, surrounded by BBQ ribs, hot dogs, hamburgers, corn on the cob, chips, dips, bread, desserts…all the foods that I would’ve been eating otherwise, but was committed to keeping my no-sugar, all natural, healthy diet.
I don’t know about you, but I’m a foodie. I like flavorful food and while I use salt and pepper in most of my recipes, those ingredients alone will not do it for me when it comes to chicken.
At the time, I was doing the Fast Metabolism Diet, which is very particular about what specific foods you can eat each day. As I looked around the picnic table where all the food was and read through the list of things I could eat that day, the only thing on the table that was on my foods list was mustard.
Mustard was not the first condiment that would come to mind to season my chicken, but I had to get creative…
Here’s the thing, I seasoned the chicken with sea salt, pepper, and mustard, put it on the grill, and set it down on the table when it was done and while I grilled my veggies. I LOVE grilled veggies! Grilling red and yellow peppers, yellow squash and asparagus bring out their great flavor. I was excited about my grilled veggies.
When I got back to the table to get the chicken, there were only two little strips left. Everybody had eaten it while I was grilling my veggies! Not only that, they wanted more! One of our friends went out to get more chicken so that I could grill more of that delicious mustard chicken I had just made.
EVERYBODY WANTED MORE MUSTARD CHICKEN
For the following two years that I went to this annual cookout with friends, I had to make the mustard chicken, required by popular demand!
My husband liked it so much that he asked me to make it later that week. And again, after that…and again…and again.
Now I make it about every two weeks, but I have also perfected the recipe a little. I added a bit of minced garlic and Safflower Mayonnaise to the recipe because it takes away a bit of the kick from the mustard for those who may find it a little strong.
If you’re on a high fat/low carb diet, Safflower Mayo is a healthy fat option. I also find that it makes the chicken even moister once it’s cooked.
THE RECIPE
This delicious mustard chicken is so flavorful that it will soon become a family favorite! It has a limited number of ingredients, making it a quick and easy recipe to put together when you’re in a crunch.

- 1 lb. Chicken breasts thawed
- 1/4 cup Yellow Mustard
- 2 Tbsp. Safflower Mayonnaise (optional)
- 1 Tbsp. Minced garlic or garlic paste
- Sea salt or pink Himalayan salt to taste
- Pepper to Taste

Pre-heat oven to bake at 500 degrees.

If chicken breasts are whole, cut into strips and place lined up next to each other in oven safe container.

Add sea salt and pepper to taste. Keep in mind that the mustard mixture is very flavorful, so go light on the sea salt.

Once spices have been added to chicken, add remaining ingredients over the chicken and spread them throughout, making sure every piece of chicken has the mustard mixture on both sides.

Cover the oven-safe container with aluminum foil.

Bake covered for 20 minutes, or until the juices coming out of the chicken are clear. Please note that every oven will be different, so the minutes in the oven may vary.

Remove aluminum foil and bake for another 5 minutes to brown the top a little.

Remove from oven and enjoy!
